Two-Day Waffle Room Pops Up in Fargo
A new pop up café in town is flipping waffles for research.
A pop up waffle café is having its grand opening and closing this weekend. The Folkways organization’s latest project is a two day café called The Waffle Room. Opening any restaurant comes with a long list of preparation.
“Brand development, to the concept, to buying the food, to your cost of labor, then your menu, and the inspections. For learning all of those steps and sharing those with the community to make it easier for other entrepreneurs that want to open restaurant,” says Folkways Community Builder Joe Burgum.
All of this work, to document the process it takes to open a restaurant while demonstrating the need for more brunch cafes in town.
“It was well done. I was very impressed with all the details managed to start off with,” says Paulie Wendelbo of Fargo.
There’s a lot that comes to running a restaurant. Calculating all the ingredients is just one the challenges.
“How much does each ingredient cost, how much are you going to need? How much can you buy? What happens when it expires? That’s a really challenging aspect,” says Burgum.
The stress didn’t slow down the staff, despite the big turnout. Families kept strolling in for fluffy waffles.
“It’s sort of gears towards family. It’s a simple concept, just doing waffles but really good waffles and really good styles,” says Scott Brusven of Fargo.

The Waffle Room will be open again Sunday from 8 am to 2 pm near 2nd Ave North and 5th Street North in downtown Fargo.
