RibFest 2025 Begins
The seminal BBQ event in the Red River Valley is getting close to its 30th installment, though organizers aren't positive exactly how close.
FARGO, N.D. (KVRR) – “I mean, I think anywhere there’s smoke, there’s flavor,” said Lauren Vega of Cowboys Barbeque and Rib Co.
It’s the good kind of smoke, though, as the haze floating down from the Canadian border has largely cleared – just in time to be replaced by sweeter fumes from the grills of masters.
The hosts of Happy Harry’s RibFest don’t have an exact count on what iteration this is, thanks to an interruption or two since the first event in 1996.
But all that matters to barbeque fans is getting the best pit bosses possible to park outside the Fargodome.
That includes Paul Mackay, who’s been spreading his “Ausome Aussie” brand since 1988 and is passionate about the flavors in the BBQ drawing inspiration from his Australian roots.
“We have fruit-based barbecue sauces. We like to use fruit woods to smoke with. We use cherry and apple because I think it’s a little milder,” he explained.
Vega of the aforementioned Cowboys has formed a deep connection with the community.
“My dad started this when I was four. He came here the very first year, we’ve been coming here ever since. We have family here now,” she said fondly.
Returning is reigning competition champions Carolina Rib King, where Solomon Williams welcomes all challengers in 2025.
“Hell, you’re no better than your last judging, so it’s time to do it again,” he laughed
Those judgements can be made once the grill smoke settles.
Until 11 P.M. on June 7th, the real winners are the stomachs in the F-M area.
“We love the people of Fargo, we love coming here every year, and you guys show up for us every year,” said Vega with a smile.
“We hope to be able to make you guys happy.”
There is more entertainment at RibFest than the food, including live music every night, inflatables from Games to Go for the kids, and the highly anticipated Bison Tailgate on Saturday afternoon.
