Mmmm Cheesy: Grilled Cheese Pop-Up Shop Comes to Fargo

A man returns to his roots to bring Fargo a taste of an old school favorite.

Fargo native, Chef Tim Rosendahl will open his pop–up bistro, Rosey’s on Roberts Alley this Wednesday.

The menu will specialize in a variety of grilled cheese sandwiches, from adding Portobello Mushrooms to your good old American grilled cheese sandwich.

This is to serve as a teaser of what is to come for when he opens his restaurant.

“I’m excited to be back in Fargo because this is my home and I have several friends and families and collegiate roommates. But bringing a restaurant to downtown Fargo is probably the most exciting thing I’ve ever done in my life. Happy to be here,” says owner, Rosendahl.

Chef Tim plans to run the pop–up shop until he can get approval to begin construction for his restaurant “Rosey’s Market and Bistro.”

The bistro is set to open in March.
