NDSU Celebrates Scandinavian Heritage with 43rd Annual Buffet

Guests enjoyed dishes like lefse, lutefisk, and pickled herring

FARGO, N.D. – NDSU Dining is proving it knows the way to the Scandinavian heart with its 43rd annual buffet.

NDSU faculty, students, and community members joined together for a traditional Scandinavian meal.

Guests enjoyed dishes like lefse, lutefisk, and pickled herring.

An event organizer has helped prepare this annual meal for the past 17 years and enjoys setting it up.

“It’s always fun to see some of the same people from the community come back, and them enjoying it,” NDSU Catering & Concessions manager Paula Schneider said. “A lot of our students that work here as well, having them coming in and probably never trying lutefisk so it’s kind of their rite of passage.”

Over 350 people bought tickets to attend the buffet.
